Method
- Preheat oven to 400°F (200°C). Grease an 8-inch square pan or cast-iron skillet.
- Mix ingredients: In a bowl, whisk together the egg, milk, sour cream, melted butter, and honey.
- Add the Jiffy mix and stir gently until combined. Do not overmix; batter should be slightly lumpy.
- Pour batter into the prepared pan and spread evenly.
- Bake for 20–25 minutes, or until golden brown and a toothpick inserted in the center comes out clean.
- Serve warm with extra butter or honey.
