  • 4 cups fresh spinach baby spinach preferred
  • 8 large eggs
  • 2 tablespoons olive oil or avocado oil, ghee, or butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon paprika optional
  • 1/4 teaspoon chili flakes optional
Optional Add-Ins:
  • 1/2 cup grated cheese cheddar, feta, or parmesan
  • 1/2 cup diced onions
  • 1/2 cup chopped tomatoes
  • 2 cloves minced garlic

Method
 

  1. Prepare the Ingredients: Wash the spinach thoroughly and pat it dry. Crack the eggs into a bowl, add salt and pepper, and whisk until combined.
