Ingredients
  

  • 1 cup couscous
  • 1 cup hot water or vegetable broth
  • 2 cups cantaloupe cubed
  • 1 cucumber sliced
  • ½ cup crumbled feta cheese
  • ¼ cup fresh mint leaves chopped
  • 2 tbsp olive oil
  • 1 tbsp fresh lime or lemon juice
  • Salt and black pepper to taste

Method
