  • Bell Peppers: ½ cup diced (any color).
  • Onion: ¼ cup finely chopped.
  • Tortillas: 4 large flour tortillas.
  • Olive Oil or Butter: 1 tablespoon for cooking the eggs and veggies.

  • Sour Cream: ½ cup for a tangy finish.
  • Salsa: ½ cup for extra flavor.
  • Avocado Slices: 1 avocado sliced (optional).

Instructions
 

Step 1: Prepare the Chicken and Veggies

  • Heat a large skillet over medium heat and add the olive oil or butter.
  • Add the diced bell peppers and onions to the skillet. Sauté for 3–4 minutes, or until softened.
  • Stir in the shredded chicken, black beans, chili powder, cumin, salt, and pepper. Cook for 2 minutes to heat through and coat the ingredients in the spices.

Step2: Cook the Scrambled Eggs

  • In a separate skillet, add a little olive oil or butter and heat over medium-low.
  • Pour the beaten eggs into the skillet and cook gently, stirring with a spatula until soft and fluffy. Remove from heat.

Step3: Assemble the Burritos

  • Lay each tortilla flat on a clean surface.
  • Add a generous scoop of the chicken and veggie mixture, followed by the scrambled eggs, shredded cheese, and any additional fillings (like salsa or avocado).
  • Roll the burrito tightly, folding in the sides as you go.

Step 4: Heat the Burritos (Optional)

  • For a warm and crispy burrito, place the rolled burritos seam-side down in a skillet over medium heat. Cook for 1–2 minutes on each side until lightly browned.
