Ingredients
  

  • 1 cup couscous instant
  • 1 cup boiling water
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup feta cheese cubed or crumbled
  • 1/3 cup black or kalamata olives pitted and halved
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions
