- Cook the couscous: Place couscous in a bowl. Pour boiling water over it, cover, and let sit for 5 minutes. Fluff with a fork and let cool.
- Prep the veggies: While couscous cools, chop the tomatoes, cucumber, olives, and parsley.
- Make the dressing: In a small bowl, mix olive oil, lemon juice, salt, and pepper.
- Combine everything: Add couscous, veggies, feta, and olives to a large bowl. Pour in the dressing.
- Toss and chill: Mix well and refrigerate for at least 15 minutes before serving.
