  • 6 cups chicken or vegetable broth
  • 2 tsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup mushrooms sliced
  • 1 carrot thinly sliced
  • 2 cups fresh spinach or bok choy
  • 12 –16 dumplings frozen gyoza, wontons, or potstickers
  • 1 cup cooked chicken shrimp, or tofu (optional)
  • 2 scallions chopped
  • Pinch of white pepper optional
  • Chili oil or chili crisp optional, for serving

Method
 

  1. Prepare Broth (0–5 min): In a large pot, heat sesame oil. Add garlic and ginger, sauté until fragrant. Pour in broth and bring to a gentle simmer.
  2. Season Base (5–10 min): Stir in soy sauce and rice vinegar. Add mushrooms and carrots. Simmer until veggies begin to soften.
  3. Add Protein (10–15 min): If using chicken, shrimp, or tofu, add now. Simmer gently until cooked through.
  4. Cook Dumplings (15–25 min): Drop dumplings straight into the simmering broth. Cook until tender (follow package directions, usually 6–8 minutes).
  5. Finish Soup (25–30 min): Stir in spinach or bok choy just before serving. Sprinkle with scallions and a dash of white pepper.
