- Boil pasta in salted water until al dente. Reserve 1/4 cup of pasta water, then drain the pasta.
- Sauté garlic in olive oil over medium heat until fragrant (about 30 seconds).
- Mix ricotta, Parmesan, lemon zest, and a pinch of salt and pepper in a large bowl.
- Add hot pasta to the ricotta mixture. Toss well, adding reserved pasta water a little at a time until creamy.
- Taste and add more salt and pepper if necessary.
- Garnish with fresh basil or parsley before serving.
