Method
- Boil the potatoes until fork-tender (about 15 minutes), then mash them until smooth. Set aside.
- Bring water (or water + milk) to a boil in a pot. Add a pinch of salt.
- Whisk in the grits slowly. Lower heat and cook, stirring often, for 15–20 minutes or until thick and creamy.
- Stir in mashed potatoes, butter, and cheese (if using). Mix well until fully combined.
- Season with salt and pepper to taste.
- Serve warm, topped with green onions or more butter if desired.
