Ingredients
  

  • 2 medium Yukon Gold potatoes peeled and cubed
  • 1 cup stone-ground grits
  • 4 cups water or 2 cups water + 2 cups milk for extra creaminess
  • 2 tablespoons butter
  • 1/2 cup shredded sharp cheddar cheese optional
  • Salt and black pepper to taste
  • Chopped green onions for garnish, optional

Method
 

  1. Boil the potatoes until fork-tender (about 15 minutes), then mash them until smooth. Set aside.
  2. Bring water (or water + milk) to a boil in a pot. Add a pinch of salt.
  3. Whisk in the grits slowly. Lower heat and cook, stirring often, for 15–20 minutes or until thick and creamy.
  4. Stir in mashed potatoes, butter, and cheese (if using). Mix well until fully combined.
  5. Season with salt and pepper to taste.
  6. Serve warm, topped with green onions or more butter if desired.
