Ingredients
  

  • 3 cups rotini pasta uncooked
  • 2 medium cucumbers thinly sliced
  • 1 cup cherry tomatoes halved
  • ½ small red onion thinly sliced
  • ½ cup feta cheese crumbled
  • ¼ cup black olives sliced (optional)
  • ½ cup Greek yogurt or mayonnaise
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 2 tablespoons fresh dill chopped
  • Salt and black pepper to taste

Method
 

  1. Cook pasta in salted water until al dente. Drain and rinse under cold water.
  2. Slice cucumbers and prep cherry tomatoes, onion, and olives.
  3. Make dressing by mixing yogurt (or mayo), olive oil, lemon juice, garlic, dill, salt, and pepper in a bowl.
  4. Combine pasta and veggies in a large bowl. Add feta cheese.
  5. Pour dressing over the salad and mix well.
  6. Chill for 30 minutes before serving for the best flavor.
