Prep: Chop onion, bell pepper, celery, and garlic. Slice sausage. Dice chicken.
Brown Meat: Heat oil in a large pot. Cook sausage until browned. Add chicken and cook until lightly golden.
Sauté Veggies: Add onion, bell pepper, celery, and garlic. Cook 3–4 minutes until soft.
Add Rice & Liquid: Stir in rice, diced tomatoes, chicken broth, Cajun seasoning, paprika, salt, and pepper. Mix well.
Simmer: Bring to a boil. Reduce heat, cover, and simmer 20 minutes or until rice is tender. Stir occasionally.
Add Shrimp: Stir in shrimp during the last 5 minutes. Cook until pink.
Finish: Fluff rice, garnish with fresh parsley, and serve hot.
