Ingredients
  

For the Crepes:
  • 1 cup all-purpose flour
  • 1 ¼ cups milk
  • 2 large eggs
  • 2 tbsp melted butter
  • 1 tbsp sugar
  • 1 tsp vanilla extract
  • Pinch of salt
For the Apple Filling:
  • 2 large apples peeled, chopped small
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • tsp nutmeg optional
  • 2 tbsp water or apple juice
For Serving:
  • Maple syrup or caramel sauce
  • Fresh mint leaves
  • Powdered sugar optional

Method
 

  1. Make the crepe batter: In a bowl, whisk flour, milk, eggs, melted butter, sugar, vanilla, and salt until smooth. Let rest for 15–20 minutes.
  2. Cook the crepes: Heat a non-stick pan over medium heat. Lightly grease. Pour ¼ cup batter and swirl to coat. Cook 1–2 minutes per side. Repeat for all crepes (makes 8).
  3. Make the apple filling: In a pan, melt butter. Add apples, brown sugar, cinnamon, nutmeg, and water. Cook on medium heat for 8–10 minutes until soft and saucy.
  4. Assemble: Spoon filling into each crepe, fold into quarters, and stack.
  5. Serve: Drizzle with warm syrup, garnish with mint, and dust with powdered sugar if desired.
