Make the crepe batter: In a bowl, whisk flour, milk, eggs, melted butter, sugar, vanilla, and salt until smooth. Let rest for 15–20 minutes.
Cook the crepes: Heat a non-stick pan over medium heat. Lightly grease. Pour ¼ cup batter and swirl to coat. Cook 1–2 minutes per side. Repeat for all crepes (makes 8).
Make the apple filling: In a pan, melt butter. Add apples, brown sugar, cinnamon, nutmeg, and water. Cook on medium heat for 8–10 minutes until soft and saucy.
Assemble: Spoon filling into each crepe, fold into quarters, and stack.
Serve: Drizzle with warm syrup, garnish with mint, and dust with powdered sugar if desired.
