Ingredients
  

  • 1 can 15 oz black beans, rinsed and drained
  • 1 cup sweet corn fresh, frozen, or canned
  • 1 cup cherry tomatoes halved
  • ½ cup red onion finely chopped
  • 1 avocado diced
  • 2 tbsp fresh cilantro chopped
  • Juice of 1 lime
  • 2 tbsp olive oil
  • 1 clove garlic minced
  • Salt and black pepper to taste

Method
 

  1. In a large bowl, combine black beans, corn, tomatoes, red onion, avocado, and cilantro.
  2. In a small bowl, whisk together lime juice, olive oil, garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss gently.
