Galouti Kebabs:
- Mix minced mutton with raw papaya paste and salt. Let it marinate for 30 minutes.
- Add onion, spices, gram flour, and ghee. Mix well to form a smooth, sticky dough.
- Shape into small round flat patties.
- Heat ghee in a pan on low heat. Fry kebabs for 2–3 minutes per side until golden brown.
- Remove gently and drain on paper towels.
Mint Chutney:
- Blend mint, coriander, chili, ginger, lemon juice, and salt with water until smooth.
- Adjust salt and consistency as needed.
