Galouti Kebabs with Mint Chutney is a flavorful and soft meat dish from Lucknow, made with finely minced mutton, aromatic spices, and raw papaya for tenderness. Ingredients
  

For Galouti Kebabs:
  • 500 g finely minced mutton double ground
  • 2 tbsp raw papaya paste tenderizer
  • 1 small onion grated
  • 2 tbsp roasted gram flour or breadcrumbs
  • 1 tbsp ghee plus extra for frying
  • 1 tsp garam masala
  • ½ tsp ground cloves
  • ½ tsp nutmeg
  • ½ tsp cinnamon
  • 1 tsp black pepper
  • Salt to taste
For Mint Chutney:
  • 1 cup fresh mint leaves
  • ½ cup fresh coriander leaves
  • 1 green chili
  • ½ inch ginger
  • Juice of ½ lemon
  • Salt to taste
  • 2 –3 tbsp water

Method
 

Galouti Kebabs:
  1. Mix minced mutton with raw papaya paste and salt. Let it marinate for 30 minutes.
  2. Add onion, spices, gram flour, and ghee. Mix well to form a smooth, sticky dough.
  3. Shape into small round flat patties.
  4. Heat ghee in a pan on low heat. Fry kebabs for 2–3 minutes per side until golden brown.
  5. Remove gently and drain on paper towels.
Mint Chutney:
  1. Blend mint, coriander, chili, ginger, lemon juice, and salt with water until smooth.
  2. Adjust salt and consistency as needed.
