Grated zucchini pizza is a quick, healthy, and low-carb alternative to traditional pizza. Made with zucchini, cheese, and eggs, it bakes into a crispy crust topped with sauce and cheese—perfect for a weeknight meal.

Ingredients
  

  • 2 medium zucchinis grated and squeezed dry
  • 1 cup shredded mozzarella cheese plus extra for topping
  • ¼ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup pizza sauce tomato, pesto, or white sauce
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Method
 

Prepare the zucchini
  1. Grate the zucchini using a box grater.
  2. Sprinkle with a little salt and let sit for 5 minutes.
  3. Squeeze out as much water as possible using a clean kitchen towel.
Make the crust
  1. In a bowl, mix zucchini, mozzarella, Parmesan, eggs, Italian seasoning, garlic powder, salt, and pepper.
  2. Stir until well combined.
Bake the base
  1. Preheat oven to 200°C (400°F).
  2. Spread the mixture onto a parchment-lined baking sheet.
  3. Shape into a thin round or rectangle crust.
  4. Bake for 15–18 minutes until golden and firm.
Add toppings
  1. Spread pizza sauce over the crust.
  2. Add extra mozzarella and your favorite toppings (veggies, chicken, or turkey pepperoni).
Final bake
  1. Return to oven for 5–7 minutes until cheese is melted and bubbly.
  2. Garnish with fresh basil.
  3. Slice and serve hot.
