Method
Prepare the zucchini
- Grate the zucchini using a box grater.
- Sprinkle with a little salt and let sit for 5 minutes.
- Squeeze out as much water as possible using a clean kitchen towel.
Make the crust
- In a bowl, mix zucchini, mozzarella, Parmesan, eggs, Italian seasoning, garlic powder, salt, and pepper.
- Stir until well combined.
Bake the base
- Preheat oven to 200°C (400°F).
- Spread the mixture onto a parchment-lined baking sheet.
- Shape into a thin round or rectangle crust.
- Bake for 15–18 minutes until golden and firm.
Add toppings
- Spread pizza sauce over the crust.
- Add extra mozzarella and your favorite toppings (veggies, chicken, or turkey pepperoni).
Final bake
- Return to oven for 5–7 minutes until cheese is melted and bubbly.
- Garnish with fresh basil.
- Slice and serve hot.
