Step 1: Marinate the Lamb
- In a mixing bowl, combine the olive oil, lemon juice, minced garlic, rosemary, salt, and pepper.
- Add the lamb slices to the marinade and toss to coat evenly. Cover and let the lamb marinate for at least 10 minutes (or up to 1 hour in the refrigerator).
Step 2: Grill the Lamb
- Heat a grill or grill pan over medium-high heat.
- Remove the lamb slices from the marinade and grill for 2–3 minutes per side, or until cooked to your desired level of doneness. Let the lamb rest for 5 minutes before slicing into thinner strips, if needed.

- Toss the arugula with olive oil, a pinch of salt, and a sprinkle of black pepper in a large bowl.
- Add the cherry tomatoes and red onion to the bowl and gently toss to combine.
Step 4: Assemble the Salad
- Divide the arugula mixture among four plates or a large serving platter.
- Top the salad with the grilled lamb slices, crumbled goat cheese, and a drizzle of balsamic glaze.
Step 5: Serve and Enjoy
- Serve immediately as a main dish or side salad. Add extra balsamic glaze on the side for drizzling, if desired.
