  • Lamb Steaks or Chops: 1 pound trimmed and sliced into thin strips.
  • Olive Oil: 2 tablespoons for marinating and grilling.
  • Garlic: 2 cloves minced.
  • Lemon Juice: 2 tablespoons freshly squeezed.
  • Rosemary: 1 teaspoon chopped fresh (or ½ teaspoon dried).
  • Salt and Pepper: To taste.

  • Arugula: 6 cups of fresh arugula baby arugula works well.
  • Cherry Tomatoes: 1 cup halved.
  • Goat Cheese: ½ cup crumbled.
  • Red Onion: ¼ cup thinly sliced.

Ingredients For the Dressing and Garnish:

  • Balsamic Glaze: 3 tablespoons for drizzling.
  • Olive Oil: 2 tablespoons for tossing the greens.
  • Salt and Pepper: To taste.

Instructions
 

Step 1: Marinate the Lamb

  • In a mixing bowl, combine the olive oil, lemon juice, minced garlic, rosemary, salt, and pepper.
  • Add the lamb slices to the marinade and toss to coat evenly. Cover and let the lamb marinate for at least 10 minutes (or up to 1 hour in the refrigerator).

Step 2: Grill the Lamb

  • Heat a grill or grill pan over medium-high heat.
  • Remove the lamb slices from the marinade and grill for 2–3 minutes per side, or until cooked to your desired level of doneness. Let the lamb rest for 5 minutes before slicing into thinner strips, if needed.

Step 3: Prepare the Salad Base

  • Toss the arugula with olive oil, a pinch of salt, and a sprinkle of black pepper in a large bowl.
  • Add the cherry tomatoes and red onion to the bowl and gently toss to combine.

Step 4: Assemble the Salad

  • Divide the arugula mixture among four plates or a large serving platter.
  • Top the salad with the grilled lamb slices, crumbled goat cheese, and a drizzle of balsamic glaze.

Step 5: Serve and Enjoy

  • Serve immediately as a main dish or side salad. Add extra balsamic glaze on the side for drizzling, if desired.
