- 2 lbs beef chuck cut into bite-sized chunks
- 2 tbsp vegetable oil
- 2 large onions diced
- 3 garlic cloves minced
- 2 tbsp sweet paprika
- 1 tsp caraway seeds optional
- 3 tbsp tomato paste
- 4 cups beef broth
- 2 large potatoes peeled and cubed
- 2 carrots sliced
- 1 red bell pepper chopped
- Salt and pepper to taste
- Fresh parsley chopped (for garnish)
Sear the Beef: Heat oil in a large pot or Dutch oven over medium-high heat. Add the beef chunks and sear them until all sides are browned.. Remove and set aside.
