Ingredients
  

Vegetables:

  • 1 medium head of cabbage chopped
  • 3 medium carrots sliced
  • 2 celery stalks chopped
  • 1 large onion diced
  • 3 garlic cloves minced
  • 2 medium tomatoes diced (or 1 cup canned diced tomatoes)

Seasonings:

  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley chopped
  • Optional: 1/2 teaspoon chili flakes

Stock:

  • 6 cups vegetable or chicken stock

Optional Additions:

  • 2 medium potatoes diced
  • 1 cup cooked beans kidney or cannellini
  • 1/2 cup cooked rice or quinoa

Instructions
 

Step 1: Prep the Ingredients

  • Wash all vegetables thoroughly. Chop the cabbage, carrots, celery, and potatoes into bite-sized pieces. Dice the onion and tomatoes. Mince the garlic

Step 2: Sauté Aromatics

  • Take a large stockpot, and pour s tablespoon of olive oil in it, then heat it on medium heat.. Add the onions, garlic, and celery. Sauté until softened and fragrant. This will take you about for 3–5 minutes.

Step 3: Simmer the Soup

  • Add cabbage, and other chopped vegetables like carrots, potatoes, and tomatoes to the pot. Add 6 cups of vegetable or chicken stock. Add salt, pepper, thyme, and chili flakes if desired. As soon as it starts boiling, reduce lower the heat. the soup cook gently for 30–45 minutes until the vegetables are tender.

Step 4: Garnish and Serve

  • Ladle the soup into bowls while hot. Garnish with fresh parsley or croutons. complete this meal with bread or rice.
