Prepare the Dough:
- Mix flour and salt in a bowl.
- Add cold butter and combine until crumbly.
- Add ice water, one tablespoon at a time, until the dough comes together.
- Shape into a disk, wrap, and chill for 30 minutes.
Make the Filling:
- Peel, core, and slice the apples thinly.
- Toss them with sugar, brown sugar, cinnamon, nutmeg, flour (or cornstarch), and lemon juice.
Roll Out the Dough:
- Roll the chilled dough into a circle about 1/8 inch thick.
- Place it into a pie dish, trimming any excess.
Assemble the Pie:
- Pour the apple filling into the crust and dot with butter.
- Cover with another rolled-out crust or create a lattice design. Seal and crimp the edges.
Apply Egg Wash (Optional):
- Brush the top crust with the egg wash for a golden finish.
Bake:
- Preheat the oven to 375°F (190°C).
- Bake for 45-50 minutes, or until the crust is golden and the filling bubbles.
Cool and Serve:
- Let the pie cool for at least 2 hours before slicing. Enjoy warm or at room temperature!
