For the Pie Crust:
- 1 1/4 cups all-purpose flour
- 1/2 cup unsalted butter cold, cubed
- 1/4 teaspoon salt
- 3 –4 tablespoons ice water
For the Apple Pie Filling:
- 2 large apples Granny Smith or Honeycrisp
- 1/4 cup granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon all-purpose flour or cornstarch for thickening
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter
For the Egg Wash (Optional):
- 1 egg beaten
- 1 tablespoon milk or water
Prepare the Dough:
Mix flour and salt in a bowl.
Add cold butter and combine until crumbly.
Add ice water, one tablespoon at a time, until the dough comes together.
Shape into a disk, wrap, and chill for 30 minutes.
Make the Filling:
Peel, core, and slice the apples thinly.
Toss them with sugar, brown sugar, cinnamon, nutmeg, flour (or cornstarch), and lemon juice.
Roll Out the Dough:
Roll the chilled dough into a circle about 1/8 inch thick.
