Ingredients Method

Ingredients
  

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon sugar optional, adjust to taste
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup milk or buttermilk
  • 1 large egg
  • ¼ cup melted butter plus extra for greasing

Method
 

Mix Dry Ingredients
  1. 1 cup yellow cornmeal
  2. 1 cup all-purpose flour
  3. 1 tablespoon baking powder
  4. ½ teaspoon salt
  5. 1 tablespoon sugar (optional)
Mix Wet Ingredients
  1. 1 cup milk (or buttermilk)
  2. 1 large egg
  3. ¼ cup melted butter
Combine and Stir Gently
  1. Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Don’t overmix.
Pour and Bake
  1. Pour the batter into the greased dish or skillet. Smooth the top.
  2. Bake for 20–25 minutes, or until the top is golden and a toothpick comes out clean.
Cool and Serve
  1. Let it rest for 5 minutes. Slice and serve warm with butter, jam, or honey.
