  • 2 large eggs
  • cups milk
  • 2 tablespoons melted butter
  • Pinch of salt
  • 1 tablespoon sugar optional, recommended for sweet crepes
  • 2 cups mixed fresh berries strawberries, blueberries, raspberries
  • Powdered sugar for dusting
  • Whipped cream optional

Method
 

Step 1: Make the Batter
  1. Whisk eggs and milk in a bowl until smooth.
  2. Slowly add flour, sugar, salt, and melted butter.
  3. Whisk until you have a thin, lump-free batter.
  4. Let batter rest for 5–10 minutes.
Step 2: Cook the Crepes
  1. Heat a non-stick pan or skillet over medium heat.
  2. Lightly grease with butter or oil.
  3. Pour about ¼ cup batter into the pan and quickly swirl to coat evenly.
  4. Cook until lightly golden, about 1 minute per side.
  5. Repeat until all batter is used, stacking crepes as you go.
