Make crust: Mix graham cracker crumbs, melted butter, and sugar. Press into a small pie dish. Chill for 10 minutes or bake at 350°F (175°C) for 8 minutes.
Mix filling: Whisk sweetened condensed milk, fresh lime juice, zest, and egg yolks (if using) until smooth.
Fill crust: Pour the filling into the crust.
Bake (optional): Bake for 10–12 minutes at 350°F if using eggs. If not, skip baking.
Chill: Cool to room temp, then chill in fridge for at least 2 hours.
