Ingredients
  

  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • 2 tablespoons sugar for crust
  • 1 can 14 oz sweetened condensed milk
  • 1/4 cup fresh key lime juice about 4–5 key limes
  • 1 teaspoon key lime zest
  • 2 egg yolks optional, for firmer filling
  • 1/2 cup whipped cream for topping
  • Extra lime slices or zest for garnish

Method
 

  1. Make crust: Mix graham cracker crumbs, melted butter, and sugar. Press into a small pie dish. Chill for 10 minutes or bake at 350°F (175°C) for 8 minutes.
  2. Mix filling: Whisk sweetened condensed milk, fresh lime juice, zest, and egg yolks (if using) until smooth.
  3. Fill crust: Pour the filling into the crust.
  4. Bake (optional): Bake for 10–12 minutes at 350°F if using eggs. If not, skip baking.
  5. Chill: Cool to room temp, then chill in fridge for at least 2 hours.
  6. Serve: Top with whipped cream and fresh lime garnish. Enjoy!
