Ingredients
  

  • 1 cup all-purpose flour
  • ½ cup sugar
  • ½ cup unsalted butter softened
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 4 –5 fresh plums sliced
  • 1 tbsp lemon zest optional
  • ½ tsp ground cinnamon optional
  • Pinch of salt

Method
 

  1. Preheat Oven – Set to 180°C (350°F). Grease and line a small cake pan.
  2. Cream Butter & Sugar – In a bowl, beat butter and sugar until light and fluffy.
  3. Add Eggs & Vanilla – Mix in eggs one at a time. Stir in vanilla extract.
  4. Mix Dry Ingredients – In another bowl, combine flour, baking powder, salt, and optional cinnamon.
  5. Combine Wet & Dry – Gently fold dry mixture into the butter mixture. Add lemon zest.
  6. Add Plums – Pour batter into pan. Arrange plum slices on top.
  7. Bake – Place in oven for 30–35 minutes until golden. Check with a toothpick.
  8. Cool & Serve – Let it rest for 10 minutes. Slice and enjoy warm or at room temperature.
