Method
- Mix all ingredients in a large bowl.
- Knead the mixture by hand for 5 minutes until sticky.
- Chill in the fridge for 30–60 minutes.
- Shape the meat around skewers into long kebabs.
- Cook on grill, in oven at 220°C (430°F), or pan-fry on medium heat for 10–15 minutes. Flip and baste with oil or ghee.
- Serve hot with naan, chutney, or salad.
