Ingredients
  

  • 500 g ground beef or lamb 15–20% fat
  • 1 medium onion grated and squeezed
  • 3 garlic cloves minced
  • 1 tbsp ginger grated
  • 2 green chilies finely chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • ½ tsp chili powder
  • ½ tsp turmeric optional
  • 1 tbsp fresh coriander chopped
  • 1 tbsp fresh mint chopped
  • 1 tsp salt
  • 1 tbsp oil or ghee for basting
  • Optional: 1 tbsp gram flour or 1 egg for binding

Method
 

  1. Mix all ingredients in a large bowl.
  2. Knead the mixture by hand for 5 minutes until sticky.
  3. Chill in the fridge for 30–60 minutes.
  4. Shape the meat around skewers into long kebabs.
  5. Cook on grill, in oven at 220°C (430°F), or pan-fry on medium heat for 10–15 minutes. Flip and baste with oil or ghee.
  6. Serve hot with naan, chutney, or salad.
