Method
- Preheat oven to 375°F (190°C).
- Whisk eggs, milk, salt, and pepper in a large bowl.
- Heat olive oil in an oven-safe skillet over medium heat.
- Sauté spinach for 1–2 minutes until wilted.
- Pour egg mixture into skillet. Add tomatoes and cheese on top.
- Cook on stove for 2–3 minutes until edges start to set.
- Transfer skillet to oven. Bake for 10–12 minutes or until center is set.
- Let it cool slightly, then slice and serve.
