Ingredients
  

  • 8 large eggs
  • 1/4 cup milk or cream
  • 1 cup fresh spinach chopped
  • 1/2 cup cherry tomatoes halved
  • 1/2 cup shredded cheese cheddar or mozzarella
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Whisk eggs, milk, salt, and pepper in a large bowl.
  3. Heat olive oil in an oven-safe skillet over medium heat.
  4. Sauté spinach for 1–2 minutes until wilted.
  5. Pour egg mixture into skillet. Add tomatoes and cheese on top.
  6. Cook on stove for 2–3 minutes until edges start to set.
  7. Transfer skillet to oven. Bake for 10–12 minutes or until center is set.
  8. Let it cool slightly, then slice and serve.
