Honey Roasted Carrot Salad with Feta & Arugula

Ingredients
  

  • 6 –8 medium carrots peeled and cut into sticks
  • 2 tbsp honey
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 1 tsp ground cumin optional
  • 4 cups fresh arugula
  • ½ cup crumbled feta cheese
  • ¼ cup chopped walnuts or almonds
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard optional

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Toss carrots with olive oil, honey, salt, pepper, and cumin.
  3. Roast on a baking sheet for 18–22 minutes until tender and golden.
  4. Whisk dressing with lemon juice, olive oil, honey, and Dijon.
  5. Assemble salad: place arugula on a platter, top with warm carrots, feta, and nuts.
  6. Drizzle dressing and serve warm or at room temperature.
