Ingredients
  

For the Kofta Kebabs:

  • 500 g ground beef or lamb or a mix
  • 1 small onion grated and squeezed
  • 2 garlic cloves minced
  • 2 tbsp chopped parsley
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp cinnamon
  • Salt and black pepper to taste
  • 1 tbsp olive oil optional, for moisture

For the Grilled Peppers:

  • 8 small green chili peppers or shishito peppers
  • 1 tbsp olive oil
  • Pinch of salt

For the Red Onion Salad:

  • 1 red onion thinly sliced
  • 1 tbsp chopped parsley
  • 1 tsp sumac
  • Juice of 1/2 lemon
  • Pinch of salt

Instructions
 

  • Make the Kofta Mix: Combine all kebab ingredients in a bowl. Mix well by hand. Chill for 30 minutes.
  • Shape the Kebabs: Divide the mix into 8 equal portions. Shape into logs or wrap around skewers.
  • Grill the Kebabs
  • Preheat grill or grill pan. Cook kebabs for 4–5 minutes per side until browned and cooked through.
  • Grill the Peppers: Toss peppers with olive oil and salt. Grill until charred and soft (about 3–4 minutes).
  • Prepare the Onion Salad: Mix red onion, parsley, sumac, lemon juice, and salt in a small bowl. Let sit for 5–10 minutes.
  • Serve: Plate the kofta kebabs with grilled peppers and red onion salad. Serve with flatbread or rice if desired.
