Make the Kofta Mix: Combine all kebab ingredients in a bowl. Mix well by hand. Chill for 30 minutes.
Shape the Kebabs: Divide the mix into 8 equal portions. Shape into logs or wrap around skewers.
Grill the Kebabs
Preheat grill or grill pan. Cook kebabs for 4–5 minutes per side until browned and cooked through.
Grill the Peppers: Toss peppers with olive oil and salt. Grill until charred and soft (about 3–4 minutes).
Prepare the Onion Salad: Mix red onion, parsley, sumac, lemon juice, and salt in a small bowl. Let sit for 5–10 minutes.
Serve: Plate the kofta kebabs with grilled peppers and red onion salad. Serve with flatbread or rice if desired.
