Ingredients For the Lamb Patties:

  • Ground Lamb: 1 pound.
  • Garlic: 2 cloves minced.
  • Cumin: 1 teaspoon.
  • Paprika: 1 teaspoon.
  • Oregano: 1 teaspoon dried.
  • Salt and Pepper: To taste.
  • Olive Oil: 1 tablespoon for grilling or pan-frying.

Ingredients For the Mint Yogurt Sauce:

  • Greek Yogurt: 1 cup plain and unsweetened.
  • Mint: 2 tablespoons finely chopped.
  • Lemon Juice: 1 tablespoon freshly squeezed.
  • Garlic Powder: ¼ teaspoon.
  • Salt: ½ teaspoon or to taste.

Ingredients For the Pickled Onions:

  • Red Onion: 1 medium thinly sliced.
  • White Vinegar: ½ cup.
  • Water: ½ cup.
  • Sugar: 1 tablespoon.
  • Salt: 1 teaspoon.

Ingredients For the Assembly:

  • Brioche Buns: 4 toasted.
  • Lettuce or Arugula: 1 cup for layering.
  • Optional Toppings: Sliced tomatoes cucumber slices, or feta cheese crumbles.

Instructions
 

Step 1: Prepare the Pickled Onions

  • Combine the vinegar, water, sugar, and salt in a small saucepan. Make sure the salt and sugar have melt by using medium heat. Then, remove from heat.
  • Place the sliced red onions in a jar or bowl. Pour the pickling liquid over them. Let them sit for at least 15 minutes while you prepare the rest of the meal.

Step 2: Make the Mint Yogurt Sauce

  • In a bowl, combine all the following: The Greek yogurt, chopped mint, lemon juice, garlic powder, and salt. After you mix well, chill it in the refrigerator. Keep there until ready to serve.

Step 3: How to Prepare the Lamb Patties

  • Combine the ground lamb, minced garlic, cumin, paprika, oregano, salt, and pepper in a bowl. Mix gently, and make sure the spices are evenly distributed.
  • Group the mixture into four equal portions. Then, shape them into patties. Make sure they are just slightly larger than the size of the brioche buns (they'll shrink slightly while cooking).

Step 4: Cook the Lamb Patties

  • First, Heat a grill or skillet over medium-high heat. Then, add some olive oil if you use a skillet.
  • Cook the lamb patties for 4–5 minutes per side or until they reach your desired doneness. An internal temperature of 63°C is perfect for medium. After that, let the patties rest for a few minutes.

Step 5: Assemble the Burgers

  • Crisp up the brioche buns a bit on the grill or in a skillet for extra flavor.
  • Spread a generous dollop of mint yogurt sauce on the bottom bun.
  • Layer with lettuce or arugula, a cooked lamb patty, and a pile of pickled onions. If desired, add additional toppings like sliced tomatoes or cucumber.
  • Garnish with the top bun and serve immediately.
