1.Sauté the Aromatics
- Use medium heat to heat vegetable oil in a large pot. Sauté chopped onion until golden brown.
- Add and cook garlic and ginger until fragrant. This takes about 1-2 min.
2.Cook the Lamb
- Add the lamb cubes to the pot and brown them on all sides for 5 minutes.
- Stir in cumin, turmeric, coriander powder, garam masala, and red chili powder to coat the meat evenly.
3.Simmer the Curry Sauce
- Dice tomatoes and cook it for 5 min until softened. Then pour coconut milk and simmer gently.
- Cook and thicken the sauce on low heat for 20-25 min. Makes sure the lamb is tender.
4. Assemble the Rice Bowl
- Spoon cooked basmati rice into bowls, then top with the lamb curry.
- Garnish with fresh herbs of your choice. This will add an amazing burst of flavor.
