  • Tomatoes: 2 medium or 1 cup canned diced tomatoes.

  • Coriander Powder and Garam Masala: 1 teaspoon each for classic Indian curry flavor.
  • Red Chili Powder: ½ teaspoon optional for extra heat.

3. Ingredients For the Rice Bowl:

  • Basmati Rice: 1½ cups cooked fluffy, and fragrant.

Instructions
 

1.Sauté the Aromatics

  • Use medium heat to heat vegetable oil in a large pot. Sauté chopped onion until golden brown.
  • Add and cook garlic and ginger until fragrant. This takes about 1-2 min.

2.Cook the Lamb

  • Add the lamb cubes to the pot and brown them on all sides for 5 minutes.
  • Stir in cumin, turmeric, coriander powder, garam masala, and red chili powder to coat the meat evenly.

3.Simmer the Curry Sauce

  • Dice tomatoes and cook it for 5 min until softened. Then pour coconut milk and simmer gently.
  • Cook and thicken the sauce on low heat for 20-25 min. Makes sure the lamb is tender.

4. Assemble the Rice Bowl

  • Spoon cooked basmati rice into bowls, then top with the lamb curry.
  • Garnish with fresh herbs of your choice. This will add an amazing burst of flavor.
