  • 1 cup whole milk ricotta cheese
  • 2 tbsp extra virgin olive oil plus more for drizzling
  • 1 garlic clove minced
  • 1/2 tsp lemon zest
  • Salt and pepper to taste
  • 1/4 cup mixed olives kalamata or green, pitted and halved
  • 1 tbsp fresh basil or parsley chopped
  • Crackers or toasted bread for serving

Method
 

  1. In a bowl, combine ricotta, olive oil, lemon zest, garlic, salt, and pepper.
  2. Whip with a hand mixer or spoon until smooth and creamy.
  3. Transfer to a serving bowl.
