Method
1. Prep Your Ingredients
- Cook 2 cups of rice as it is mentioned in the package instructions. Set it aside to cool slightly.
- Steam 2 cups of fresh or frozen broccoli florets until tender. Drain any excess water.
- Shred or dice 2 cups of cooked chicken. Use pre-cooked rotisserie chicken or cook chicken breasts in advance.
2. Prepare the Sauce
- In a medium bowl, mix 1 can of cream of chicken soup with 1/2 cup of milk.
- Add 1/4 teaspoon each ofonion powder and garlic powder. Stir well.
- Season with salt and pepper to taste.
3. Assemble the Casserole
- Preheat your oven to 375°F (190°C).
- Oil a baking dish with cooking spray or butter.
- Spread the cooked rice evenly in the bottom of the dish.
- Layer the shredded chicken on top of the rice.
- Add the steamed broccoli over the chicken layer.
- Pour the prepared sauce evenly over the layers, ensuring everything is coated.
- Put 1 cup of shredded cheddar cheese on top.
4. Add Optional Toppings
- For a crispy topping, mix 1/2 cup of breadcrumbs with one tablespoon of melted butter.
- Drizzle the breadcrumb mixture over the cheese layer.
5. Bake the Casserole
- Bake the dish for 20 min. make sure it is well covered.
- Take away the foil and bake for an additional 10–15 minutes.
- If using additional cheese, sprinkle it on top in the last 5 minutes of baking.
6. Serveand Enjoy
- Cool the casserole for 5 minutes after you remove it from the oven.
- For a complete meal, serve warmly and with a side salad or crusty bread.
