Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 packet 7g active dry yeast
  • 1/2 cup warm milk
  • 2 eggs room temperature
  • 1/4 cup unsalted butter softened
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon grated lemon zest
  • 1/2 cup raisins
  • 1/4 cup candied orange peel or dried apricots

Method
 

  1. Activate yeast: Mix warm milk, 1 tsp sugar, and yeast. Let sit for 10 minutes until foamy.
  2. Make dough: In a bowl, mix flour, sugar, and salt. Add yeast mixture, eggs, butter, vanilla, and zest. Knead until smooth (about 8–10 minutes).
  3. Add fruits: Fold in raisins and orange peel. Cover and let rise for 1–2 hours, until doubled.
  4. Shape & rise again: Place dough in a tall paper mold or loaf pan. Let rise for another 45–60 minutes.
  5. Bake: Preheat oven to 180°C (350°F). Bake for 35–40 minutes or until golden and a skewer comes out clean.
  6. Cool: Let it cool fully before slicing.
