Ingredients
  

  • 1 cup quinoa uncooked
  • 2 cups water
  • 1 cup fresh parsley finely chopped
  • 1/2 cup fresh mint finely chopped
  • 1 cup tomatoes diced
  • 1/2 cup cucumber diced
  • 3 green onions chopped
  • 1/4 cup olive oil
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste

Method
 

  1. Cook Quinoa: Rinse quinoa well. Boil it with water for 15 minutes or until tender. Use a fork to fluff the quinoa and let it cool down.
  2. Prep Veggies: Chop parsley, mint, tomatoes, cucumber, and green onions.
  3. Mix: In a bowl, combine cooked quinoa, chopped veggies, and herbs.
  4. Dress: Whisk olive oil, lemon juice, salt, and pepper. Pour over the salad and mix well.
  5. Serve: Chill for 15 minutes if possible, then serve fresh.
