Ingredients
  

  • 4 medium zucchinis sliced into ½-inch rounds
  • 3 tablespoons olive oil
  • 3 cloves garlic minced
  • ½ cup freshly grated Parmesan cheese
  • 2 tablespoons fresh parsley or basil/oregano, chopped
  • Salt and black pepper to taste

Method
 

  1. Preheat Oven – Set oven to 400°F (200°C).
  2. Prep Zucchini – Pat slices dry with paper towels.
  3. Season – Toss zucchini with olive oil, garlic, salt, pepper, and half the herbs.
  4. Arrange – Place in a single layer on a parchment-lined baking sheet.
  5. Add Cheese – Sprinkle Parmesan evenly over slices.
