Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice zucchini into ¼-inch thick rounds.
Season zucchini – place slices in a large bowl, add olive oil, salt, pepper, garlic, and Italian seasoning. Toss well.
Arrange slices in a single layer on the baking sheet without overlapping.
Roast for 10–12 minutes, flip slices, and roast another 10–12 minutes until golden.
Optional – sprinkle Parmesan over slices during the last 5 minutes for a crispy, cheesy top.
Serve immediately as a side dish or healthy snack.
