Roasted Zucchini Slices in the Oven

Roasted zucchini slices are a quick, healthy, and flavorful side dish. Simply slice fresh zucchini, season with olive oil, garlic, salt, and pepper, then roast in the oven until golden and tender. Perfect for lunch, dinner, or a light snack.

Ingredients
  

  • 4 medium zucchini about 800g
  • 3 tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp black pepper
  • 1 tsp garlic powder or 2 cloves fresh minced garlic
  • ¼ cup grated Parmesan cheese optional
  • 1 tsp Italian seasoning optional

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Slice zucchini into ¼-inch thick rounds.
  3. Season zucchini – place slices in a large bowl, add olive oil, salt, pepper, garlic, and Italian seasoning. Toss well.
  4. Arrange slices in a single layer on the baking sheet without overlapping.
  5. Roast for 10–12 minutes, flip slices, and roast another 10–12 minutes until golden.
  6. Optional – sprinkle Parmesan over slices during the last 5 minutes for a crispy, cheesy top.
  7. Serve immediately as a side dish or healthy snack.
