Ingredients
  

For the Sausage Gravy:
  • 1 lb ground turkey
  • ¼ cup all-purpose flour
  • cups whole milk plus extra if needed
  • ½ tsp black pepper
  • Salt to taste
For the Biscuits:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • 1 tsp salt
  • 6 tbsp cold unsalted butter cubed
  • ¾ cup cold buttermilk
Sides:
  • 6 large eggs
  • 1 tbsp butter
  • 2 cups frozen tater tots or hash browns
  • 1 orange sliced

Method
 

  1. Brown the sausage: Cook sausage in a skillet over medium heat until fully browned. Don’t drain.
  2. Make the gravy: Sprinkle flour over sausage. Stir and cook for 1 minute. Slowly add milk while stirring. Simmer until thick (5–8 minutes). Season with pepper and salt.
  3. Bake the biscuits: Preheat oven to 425°F (220°C). Mix dry ingredients. Cut in butter. Add buttermilk and mix. Roll dough and cut into rounds. Bake on a tray for 12–15 minutes until golden.
  4. Cook the eggs: Scramble eggs in butter over medium-low heat until soft and fluffy.
  5. Bake the tater tots: Cook according to package instructions (usually 20 minutes at 425°F).
  6. Plate and serve: Place biscuits on each plate, spoon over sausage gravy, and add scrambled eggs, tater tots, and orange slices on the side.
