Brown the sausage: Cook sausage in a skillet over medium heat until fully browned. Don’t drain.
Make the gravy: Sprinkle flour over sausage. Stir and cook for 1 minute. Slowly add milk while stirring. Simmer until thick (5–8 minutes). Season with pepper and salt.
Bake the biscuits: Preheat oven to 425°F (220°C). Mix dry ingredients. Cut in butter. Add buttermilk and mix. Roll dough and cut into rounds. Bake on a tray for 12–15 minutes until golden.
Cook the eggs: Scramble eggs in butter over medium-low heat until soft and fluffy.
Bake the tater tots: Cook according to package instructions (usually 20 minutes at 425°F).
Plate and serve: Place biscuits on each plate, spoon over sausage gravy, and add scrambled eggs, tater tots, and orange slices on the side.
