Summer Tomato Pie Recipe

Ingredients
  

  • 3 –4 medium ripe tomatoes Roma, heirloom, or beefsteak
  • 1 pie crust homemade or store-bought, 9-inch
  • 1 cup cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • ¼ cup parmesan cheese grated
  • ½ cup mayonnaise
  • ¼ cup fresh basil chopped
  • 2 tbsp fresh parsley chopped
  • 1 small onion optional, thinly sliced
  • Salt and black pepper to taste

Method
 

Prep the Tomatoes
  1. Slice tomatoes and place them on paper towels.
  2. Sprinkle with salt and let sit 10–15 minutes to draw out moisture. Pat dry.
Bake the Crust
  1. Preheat oven to 375°F (190°C).
  2. Place the pie crust in a 9-inch pan and bake for about 8–10 minutes until slightly golden.
Layer the Filling
  1. Arrange half the tomatoes in the crust.
  2. Add onions (if using), basil, parsley, and half the cheese.
  3. Repeat with remaining tomatoes, herbs, and cheese.
Make the Topping
  1. Mix mayonnaise with the rest of the shredded cheese.
  2. Spread evenly over the top layer of tomatoes.
Bake the Pie
  1. Place in the oven and bake for 30–35 minutes until golden and bubbly.
  2. Let it rest for 10 minutes before slicing.
