Prep the Tomatoes
- Slice tomatoes and place them on paper towels.
- Sprinkle with salt and let sit 10–15 minutes to draw out moisture. Pat dry.
Bake the Crust
- Preheat oven to 375°F (190°C).
- Place the pie crust in a 9-inch pan and bake for about 8–10 minutes until slightly golden.
Layer the Filling
- Arrange half the tomatoes in the crust.
- Add onions (if using), basil, parsley, and half the cheese.
- Repeat with remaining tomatoes, herbs, and cheese.
Make the Topping
- Mix mayonnaise with the rest of the shredded cheese.
- Spread evenly over the top layer of tomatoes.
Bake the Pie
- Place in the oven and bake for 30–35 minutes until golden and bubbly.
- Let it rest for 10 minutes before slicing.
