Ingredients

Key Components:

  • 1 large head of romaine lettuce chopped
  • 2 medium grilled chicken breasts sliced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 cup croutons

For the Dressing (Homemade Caesar Dressing):

  • 1/3 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • 2 anchovy fillets optional, finely mashed
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Optional Customization Ingredients:

  • 2 tablespoons bacon bits
  • 1/2 cup cherry tomatoes halved
  • 2 tablespoons toasted nuts e.g., walnuts or almonds

Instructions

Step 1: Season the Chicken

  • Rub chicken breasts with olive oil.
  • Coat both sides with the following ingredients: salt, pepper, garlic powder, and a pinch of paprika.
  • For extra flavor, add a splash of lemon juice or Italian seasoning.

Step 2: Cook the Chicken

  • Grilling: Heat the grill to medium-high. Cook chicken for 6-8 minutes per side or until the internal temperature reaches 165°F (74°C).
  • Pan-Searing: Pour olive oil in a skillet and put it on medium heat. Cook chicken for 6-7 minutes per side, flipping once, until fully cooked.
  • Oven-Baking: Preheat the oven to 400°F (200°C). Bake chicken on a lined baking sheet for 20-25 minutes, flipping halfway through.

Step 3: Slice the Chicken

  • Give the chicken 5 minutes rest after cooking to retain its juices.
  • Slice it thinly into strips or chunks, depending on your preference.

Step 4: Assemble the Salad

  • Place a bed of chopped romaine lettuce in a bowl or platter.
  • Add the sliced grilled chicken on top.
  • Sprinkle with freshly grated Parmesan cheese and crunchy croutons.
  • Add Caesar dressing and toss gently to combine.

Time-Saving Tip:

  • Use pre-cooked rotisserie chicken. Remove the skin, shred or slice the meat, and add it directly to your salad.
