Vegetarian Mediterranean Club Sandwich

This Mediterranean Club Sandwich is a fresh twist on the classic. Made with whole wheat pita or focaccia, hummus, grilled halloumi or tofu, cucumbers, sun-dried tomatoes, roasted red peppers, feta, and arugula, it’s packed with flavor.

Ingredients
  

  • 8 slices whole wheat pita or focaccia
  • 1 cup hummus or tzatziki
  • 8 slices grilled halloumi or marinated tofu
  • 1 cup cucumber slices
  • ½ cup sun-dried tomatoes chopped
  • 1 cup roasted red peppers sliced
  • ½ cup crumbled feta or goat cheese
  • 1 cup arugula or baby spinach
  • 2 tbsp olive oil
  • 1 tsp dried oregano

Instructions
 

  • Toast the Bread: Lightly toast the pita or focaccia for extra crispness.
  • Grill the Halloumi or Tofu: Heat a pan with olive oil and grill halloumi or tofu slices for 2-3 minutes per side until golden. Sprinkle with oregano.
  • Spread the Hummus: Evenly spread hummus (or tzatziki) on each slice of bread.
  • Layer the Ingredients: Add grilled halloumi or tofu, cucumber slices, sun-dried tomatoes, roasted red peppers, feta or goat cheese, and arugula.
  • Assemble the Sandwich: Stack the layers and press gently. Secure with toothpicks if needed.
  • Slice and Serve: Cut into halves or quarters and enjoy!
