- 8 slices whole wheat pita or focaccia
- 1 cup hummus or tzatziki
- 8 slices grilled halloumi or marinated tofu
- 1 cup cucumber slices
- ½ cup sun-dried tomatoes chopped
- 1 cup roasted red peppers sliced
- ½ cup crumbled feta or goat cheese
- 1 cup arugula or baby spinach
- 2 tbsp olive oil
- 1 tsp dried oregano
Toast the Bread: Lightly toast the pita or focaccia for extra crispness.
Grill the Halloumi or Tofu: Heat a pan with olive oil and grill halloumi or tofu slices for 2-3 minutes per side until golden. Sprinkle with oregano.
Spread the Hummus: Evenly spread hummus (or tzatziki) on each slice of bread.
