- 4 large eggs
- 1 cup milk or half-and-half
- 1 cup shredded cheese cheddar, Swiss, or feta
- 1 cup chopped vegetables spinach, bell peppers, mushrooms, onions
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg optional
