Method
- Preheat the oven to 375°F (190°C). Place the pie crust in a baking dish and set aside.
- Sauté the vegetables in olive oil over medium heat for 3–4 minutes until softened. Let them cool slightly.
- Whisk the eggs, milk, salt, pepper, and nutmeg in a bowl until smooth.
- Layer the cheese and vegetables in the pie crust. Pour the egg mixture over the top.
- Bake for 35–40 minutes until the center is set but slightly jiggly.
- Let the quiche rest for 10 minutes before slicing and serving.
