Ingredients
  

  • 1 pie crust homemade or store-bought
  • 4 large eggs
  • 1 cup milk or half-and-half
  • 1 cup shredded cheese cheddar, Swiss, or feta
  • 1 cup chopped vegetables spinach, bell peppers, mushrooms, onions
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg optional

Instructions
 

  • Preheat the oven to 375°F (190°C). Place the pie crust in a baking dish and set aside.
  • Sauté the vegetables in olive oil over medium heat for 3–4 minutes until softened. Let them cool slightly.
  • Whisk the eggs, milk, salt, pepper, and nutmeg in a bowl until smooth.
  • Layer the cheese and vegetables in the pie crust. Pour the egg mixture over the top.
  • Bake for 35–40 minutes until the center is set but slightly jiggly.
  • Let the quiche rest for 10 minutes before slicing and serving.
