Prep the lettuce and herbs – Wash and dry lettuce leaves. Rinse herbs and keep them whole. Set aside.
Cook the beef – Heat sesame oil in a large pan over medium-high heat. Add garlic, ginger, and onion. Stir for 1–2 minutes until fragrant.
Add seasonings – Add ground beef and cook until browned (5–6 minutes). Stir in soy sauce, fish sauce, lime juice, and chili paste. Cook for another 2 minutes until flavors blend.
Assemble wraps – Spoon the beef mixture into lettuce leaves. Top with fresh herbs, sliced chili, and crushed peanuts if using.
