Ingredients
  

  • 4 medium zucchinis
  • 1 cup marinara or pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • 1 cup sliced mushrooms button or cremini
  • 2 tbsp olive oil
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • 1 tsp dried basil or fresh for garnish
  • Salt & black pepper to taste

Method
 

  1. Prep zucchinis – Wash and cut zucchinis in half lengthwise. Scoop out the center to make boats. Lightly salt, let rest 10 minutes, then pat dry.
  2. Pre-bake boats – Brush with olive oil, place on a baking sheet, and bake at 375°F (190°C) for 8–10 minutes.
  3. Prepare filling – Heat olive oil in a pan, sauté garlic and mushrooms until tender, season with salt, pepper, oregano, and basil.
  4. Assemble boats – Spread marinara sauce inside each zucchini. Add sautéed mushrooms and top with mozzarella cheese.
  5. Bake – Return to oven and bake 12–15 minutes until cheese is melted and golden.
  6. Serve – Garnish with fresh basil. Enjoy warm!
