Prep zucchinis – Wash and cut zucchinis in half lengthwise. Scoop out the center to make boats. Lightly salt, let rest 10 minutes, then pat dry.
Pre-bake boats – Brush with olive oil, place on a baking sheet, and bake at 375°F (190°C) for 8–10 minutes.
Prepare filling – Heat olive oil in a pan, sauté garlic and mushrooms until tender, season with salt, pepper, oregano, and basil.
Assemble boats – Spread marinara sauce inside each zucchini. Add sautéed mushrooms and top with mozzarella cheese.
Bake – Return to oven and bake 12–15 minutes until cheese is melted and golden.
Serve – Garnish with fresh basil. Enjoy warm!
