Method
- Boil the potatoes in salted water for 10–12 minutes or until tender. Drain and cool.
- Blanch the green beans in boiling water for 2–3 minutes. Transfer to ice water, then drain.
- Make the dressing: Whisk olive oil, lemon juice, mustard, garlic, and parsley in a bowl.
- Arrange the salad: On a large platter or 4 plates, arrange potatoes, green beans, tomatoes, onion, tuna, olives, and capers.
- Add the eggs and drizzle everything with dressing.
- Season with salt and pepper, and serve immediately.
