Step 1: Prepare the Sweet Potatoes
  1. Cut the sweet potatoes into even wedges or cubes, about ½ inch thick. Uniform pieces cook more evenly.
  2. Place the sweet potatoes in a large mixing bowl. Add olive oil, smoked paprika, garlic powder, chili powder (if using), salt, and black pepper. Toss to coat every piece thoroughly.
Step 2: Air Fry the Sweet Potatoes
  1. Preheat your air fryer to 400°F (200°C) for 3 minutes. Preheating ensures crisp results.
  2. Arrange the sweet potatoes in a single layer in the air fryer basket. Overcrowding will prevent crisping.
  3. Air fry for 12–15 minutes, shaking the basket halfway through to ensure even cooking. The sweet potatoes are ready when they’re golden and crispy on the edges.
Step 3: Make the Chimichurri Sauce
  1. While the sweet potatoes cook, prepare the chimichurri sauce. Combine parsley, cilantro, garlic, red wine vinegar, olive oil, lime juice, red pepper flakes, and salt in a bowl.
