Step 1: Prepare the Sweet Potatoes
- Cut the sweet potatoes into even wedges or cubes, about ½ inch thick. Uniform pieces cook more evenly.
- Place the sweet potatoes in a large mixing bowl. Add olive oil, smoked paprika, garlic powder, chili powder (if using), salt, and black pepper. Toss to coat every piece thoroughly.
Step 2: Air Fry the Sweet Potatoes
- Preheat your air fryer to 400°F (200°C) for 3 minutes. Preheating ensures crisp results.
- Arrange the sweet potatoes in a single layer in the air fryer basket. Overcrowding will prevent crisping.
- Air fry for 12–15 minutes, shaking the basket halfway through to ensure even cooking. The sweet potatoes are ready when they’re golden and crispy on the edges.
Step 3: Make the Chimichurri Sauce
- While the sweet potatoes cook, prepare the chimichurri sauce. Combine parsley, cilantro, garlic, red wine vinegar, olive oil, lime juice, red pepper flakes, and salt in a bowl.
- Mix well and let the sauce rest for 5–10 minutes to allow the flavors to meld. For best results, make the chimichurri a few hours ahead and refrigerate it.
Step 4: Assemble and Serve
- Transfer the crispy sweet potatoes to a serving dish.
- Drizzle the chimichurri sauce generously over the potatoes, or serve it on the side for dipping.
- Garnish with extra parsley or cilantro for a pop of color.
