Ingredients
  

  • 1 cup quinoa uncooked
  • 2 cups water or chicken broth
  • 2 chicken breasts grilled and sliced
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup Kalamata olives sliced
  • 1/4 cup red onion thinly sliced
  • 2 cups mixed greens or spinach
  • 1/4 cup tzatziki sauce for drizzling
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

  • Cook Quinoa: Rinse quinoa and cook it with water or broth. Heat until it boils, then cover and cook on low for 15 minutes. Fluff with a fork.
  • Prepare Chicken: Season chicken breasts with salt and pepper. Grill or pan-fry until cooked, then slice.
  • Assemble Bowls: Divide quinoa into four bowls. Add grilled chicken, cherry tomatoes, cucumber, olives, red onion, feta, and greens.
