  • 8 chicken pieces drumsticks, thighs, or a mix
  • 2 cups buttermilk or 2 cups milk + 2 tbsp lemon juice
  • 2 cups all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper optional for heat
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil for frying

Instructions
 

  • Mix the coating: In a separate bowl, combine flour, paprika, garlic powder, onion powder, cayenne, salt, and pepper.
  • Coat the chicken: Lift the chicken from the buttermilk, shake off the extra liquid, and coat it well in the flour mixture.
  • Heat the oil: Fill a skillet with enough vegetable oil to cover the chicken halfway. Heat it to 350°F (175°C).
