Ingredients
  

  • 1 cup mashed sweet potatoes about 2 medium sweet potatoes
  • 1 large egg
  • 3 tbsp unsalted butter melted
  • cup brown sugar
  • 2 tbsp granulated sugar
  • ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • Pinch of ginger and salt
  • ½ cup evaporated milk or heavy cream for extra creaminess
  • ½ tsp vanilla extract
  • 1 9- inch pie crust store-bought or homemade

Method
 

  1. Prep the potatoes: Peel and cut sweet potatoes. Boil or roast until tender, then mash until smooth.
  2. Preheat oven: Set to 175°C (350°F). Place a baking sheet in the center rack.
  3. Make the filling: 1- In a bowl, whisk mashed sweet potatoes, melted butter, and both sugars. 2- Add cinnamon, nutmeg, ginger, and salt. 3- Then whisk in the egg, milk, and vanilla until silky.
  4. Assemble the pie: Pour the filling into the crust. Tap gently to remove air bubbles.
  5. Bake: Bake for 45–50 minutes, until edges are set and the center jiggles slightly.
  6. Cool: Let rest on a rack for 2 hours, then chill for at least 1 hour before slicing.
