Ingredients
  

  • 2 ripe but firm pears Bosc or Anjou, sliced
  • 4 cups arugula rocket or baby spinach
  • ½ cup blue cheese gorgonzola, stilton, or roquefort, crumbled
  • ½ cup walnuts toasted or candied
  • 1 tbsp butter or olive oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp balsamic vinegar
Dressing:
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup
  • Pinch of salt and pepper

Method
 

  1. Toast walnuts in a dry pan until fragrant. Set aside.
  2. In the same pan, melt butter over medium heat. Add pear slices and cook 2–3 minutes per side.
  3. Drizzle honey (or maple) and balsamic vinegar. Let them caramelise slightly, then remove from heat.
  4. Whisk dressing ingredients until smooth.
  5. Toss greens lightly with dressing, then top with warm pears, blue cheese, and walnuts.
  6. Serve immediately while pears are still warm.
